    Baked Peaches with Cinnamon Oat Crumble

    These easy baked peaches are topped with crunchy cinnamon oat crumble, and served warm with ice cream. They taste just like peach pie in the mouth but are done healthier!

    Baked peaches are so sweet and decadent. As they cook and soften, the flavor really intensifies.

    It is a perfect summer dessert that can be served warm or cold, and it is so easy to make. I love it that this recipe is very hands free - all you need to do is to top the peaches with the crumble and leave them oven for 20 minutes or so. The skin can stay on as it softens, and extra fiber is always a good bonus!

    Ingredients for this recipe

    • Peaches - Halved and pitted. Use very ripe ones for a sweeter and juicier result!
    • Gluten-free old fashioned oatmeal
    • Olive oil
    • Maple syrup
    • Cinnamon 

    Toppings:

    • Ice cream - Dairy-free ice cream of your choice.
    • Cinnamon

    How to make these baked peaches

    1. Prepare the peaches. Place the peaches with the cut side up on a baking sheet. Drizzle 2 tablespoons of olive oil over the peaches.

    2. Make the crumble topping. In a small bowl, combine all ingredients for the oat crumble together and mix well. Top the peaches with the crumble.

    3. Bake. Bake in the oven for about 20 minutes or until the peaches are fork tender.

    4. Top and serve. Top with ice cream and cinnamon. Serve warm.

    How should I store baked peaches

    Baked peaches can be covered tightly and refrigerated for up to 3 days. Microwave, or heat up in a toaster oven. They are the best when eaten fresh out of the oven, but you can also bake a bigger batch ahead of time and heat up later. 

    Can I double this recipe?

    This recipe can be doubled or tripled, or more as long as they all fit on a baking sheet together.

    How can I ripen the peaches?

    Key to delicious baked peaches is to use very ripe peaches. I usually let them sit at room temperature for a couple of days until they are ready to go. Also, did you know that you can speed up the ripening by storing bananas together in a bag? It is worth a try!

    Ingredients
      

    • 2 ripe peaches halved and pitted
    • 2 tablespoons olive oil

    For the oat crumble

    • ¼ cup gluten-free old fashioned oatmeal
    • 1 tablespoon olive oil
    • 1 tablespoon maple syrup
    • 1 teaspoon cinnamon

    For topping

    • 4 scoops Non-dairy ice cream of your choice
    • A dash of cinnamon
    Prevent your screen from going dark

    Instructions
     

    • Preheat the oven to 400°F/ 204°C.
    • Place the peaches with the cut side up on a baking sheet. Drizzle 2 tablespoons of olive oil over the peaches.
    • In a small bowl, combine all ingredients for the oat crumble together and mix well. Top the peaches with the crumble.
    • Bake in the oven for about 20 minutes or until the peaches are fork tender.
    • Top with ice cream and cinnamon. Serve warm or cold.
