Add 3 tbsp of water, cover the container loosely. Microwave for 2-3 minutes until the onion is softer but slightly crunchy. Alternatively, blanch the onions in boiling water for 3-4 minutes and drain.

Add the rice vinegar, sugar and fish sauce to the onions. Close the lid tightly and shake well.
