Heat up the olive oil in a large pan. Cook the onion until tender. Then add in the garlic, grated ginger and cook until fragrant.

Add the smoked paprika, turmeric, cumin. Cook for about 1 minute or until fragrant.

Add in the lentils, diced tomatoes with the juice , coconut milk, vegetable broth and salt. Bring to a boil and let simmer for 15 - 20 minutes until the lentils are soft.
