Equipment

  • 1 airtight container

Ingredients

  • 3 tablespoons bonito flakes
  • 2 tablespoons tamari soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 teaspoons sugar
  • ½ teaspoon salt
  • 2 teaspoon crushed red pepper
  • 1 pound seedless cucumbers cut into bite size pieces

Instructions

  • In a small bowl, combine all ingredients except for the cucumber together. Set aside.
  • Place the cucumber in an airtight container.
  • Pour the sauce mix over the cucumber. Close the lid and shake well.

Notes

1 pound of cucumber is approximately 3-4 mini sized, or one large sized.
An airtight bag can be used instead of an airtight container.
The flavor develops if you let sit for over an hour or overnight in the fridge!
