Baked Peaches with Cinnamon Oat Crumble

These easy baked peaches are topped with crunchy cinnamon oat crumble, and served warm with ice cream. They taste just like peach pie in the mouth but are done healthier! This recipe is gluten-free and vegan.

Ingredients
  

  • 2 ripe peaches halved and pitted
  • 2 tablespoons olive oil

For the oat crumble

  • ¼ cup gluten-free old fashioned oatmeal
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon

For topping

  • 4 scoops Non-dairy ice cream of your choice
  • A dash of cinnamon

Instructions
 

  • Preheat the oven to 400°F/ 204°C.
  • Place the peaches with the cut side up on a baking sheet. Drizzle 2 tablespoons of olive oil over the peaches.
  • In a small bowl, combine all ingredients for the oat crumble together and mix well. Top the peaches with the crumble.
  • Bake in the oven for about 20 minutes or until the peaches are fork tender.
  • Top with ice cream and cinnamon. Serve warm or cold.

Notes

Make sure to use very ripe peaches for a sweeter, softer result.
This recipe can doubled, tripled, or more as long as they all fit on a baking sheet together.
