Ingredients
 
 

  • 1 cup jasmine rice
  • cup water
  • ¼ teaspoon salt
  • 1 clove garlic minced
  • 2 teaspoons olive oil used in two parts
  • cup chopped cilantro
  • 1 stalk scallion finely chopped
  • 1 tablespoon fresh lime juice

Optional toppings:

  • Cilantro leaves
  • Red pepper flakes

Instructions
 

  • Rinse the jasmine rice and drain well using a strainer.
  • Place the rice, water, minced garlic, 1 teaspoon olive oil and salt in a small saucepan.
  • Bring to a boil, then cover with a lid. Lower the heat and simmer for 15 minutes, or until the water is completely absorbed. Turn the heat off and let it stand for 5 minutes.
  • Add the cilantro, scallion, remaining olive oil, and lime juice. Stir gently. Season with more salt if desired.
  • Serve with cilantro leaves and red pepper flakes.
