Ground Pork Pasta

Ingredients
 
 

  • 2 tablespoons olive oil used in two parts
  • 2 cloves garlic minced
  • 10 ounces ground pork not sausage ground pork
  • ¼ teaspoon salt
  • ½ cup thinly sliced Chinese leek
  • 1 tablespoon tamari soy sauce
  • 6 ounces gluten-free pasta I use Rummo spaghetti

Toppings

  • Ground black pepper
  • Fresh lime slices

Instructions
 

  • Heat up 1 tablespoon olive oil in a large pan. Cook the garlic until fragrant.
  • Add the ground pork and salt. Cook fully.
  • Add the leek and tamari soy sauce. Cook until the leek softens.
  • Cook the pasta according to the package, in salted water. Reserve ½ cup of pasta water and drain well using a strainer.
  • Add the cooked pasta to the pork mix. Add the ½ cup pasta water and 1 tablespoon olive oil. Toss gently with tongs.
  • Serve on plates. Top with ground pepper and fresh lime slices.

Notes

Substituting leeks: Chinese leeks are thinner and milder than regular leeks. If you substitute with regular leeks, cook them for a slightly longer time.
