These Japanese sweet potato fries are crispy on the outside and fluffy soft on the inside. They are oven roasted to perfection, with just 4 simple ingredients. Enjoy this naturally sweet, delicious and healthier fries as a side or snack!
Wash and scrub the potatoes well. Peel them partially or entirely, depending on your preference.
Cut the potatoes into sticks. Thinner the quicker they will cook. Make sure they are evenly cut for even cooking.
Place the potatoes in a large bowl and sprinkle cornstarch. Toss well to coat.
Pour the oil over the potatoes and toss to coat.
Place the potatoes on a baking sheet in one layer. You may need 2 sheets depending on the volume you have.
Roast for about 25 minutes or until golden brown and crispy. Flip the fries once around 15 minutes into baking.
Sprinkle salt and serve.
Notes
If you would like them to be on the crispier side, cut in ¼ inch thickness. For a softer interior, cut in ½ inch thickness. Do not over crowd the potatoes as that can end up steaming and prevent them from getting crispy.
