Japanese Sweet Potato Fries (Baked)

These Japanese sweet potato fries are crispy on the outside and fluffy soft on the inside. They are oven roasted to perfection, with just 4 simple ingredients. Enjoy this naturally sweet, delicious and healthier fries as a side or snack!

Ingredients
 
 

  • 2 medium Japanese sweet potatoes weight: 1¼lb
  • 2 teaspoons cornstarch
  • 2 tablespoons avocado oil or olive oil
  • salt to taste

Instructions
 

  • Preheat the oven to 425°F/ 218°C.
  • Wash and scrub the potatoes well. Peel them partially or entirely, depending on your preference.
  • Cut the potatoes into sticks. Thinner the quicker they will cook. Make sure they are evenly cut for even cooking.
  • Place the potatoes in a large bowl and sprinkle cornstarch. Toss well to coat.
  • Pour the oil over the potatoes and toss to coat.
  • Place the potatoes on a baking sheet in one layer. You may need 2 sheets depending on the volume you have.
  • Roast for about 25 minutes or until golden brown and crispy. Flip the fries once around 15 minutes into baking.
  • Sprinkle salt and serve.

Notes

If you would like them to be on the crispier side, cut in ¼ inch thickness. For a softer interior, cut in ½ inch thickness. 
Do not over crowd the potatoes as that can end up steaming and prevent them from getting crispy.
