Satay beef noodles is a flavorful dish with tender sliced beef, vegetables, rice vermicelli tossed in homemade nutty satay sauce. It can be made in just around 20 minutes, making a great option for weekday lunch/ dinner.

9 ounces rice vermicelli noodles (dry) I use Vietnamese style 2 tablespoons olive oil 4 cloves garlic minced 1 medium onion thinly sliced 1 pound thinly sliced beef ¼ teaspoon salt 1 tablespoon sake or dry white wine 1 red bell pepper thinly sliced For satay sauce ¼ cup unsweetened peanut butter natural type ¼ cup tamari soy sauce 3 tablespoons honey 2 tablespoons rice vinegar For toppings Thinly sliced scallions Crushed peanuts

To make satay sauce, combine the peanut butter, tamari soy sauce, honey and vinegar together in a bowl. Set aside.
Cook the rice noodles according to the package. Rinse under cold water to avoid sticking and cooking further. Drain well using a strainer.
Heat up the olive oil. Cook the garlic and onion until the onion is slightly tender.
Add the beef, salt, and sake. Cook 80% of the way.
Add the red bell pepper. Cook for a minute.
Add the cooked noodles and satay sauce. Toss gently.
Serve with scallions and crushed peanuts.
