Satay Beef Noodles

Satay beef noodles is a flavorful dish with tender sliced beef, vegetables, rice vermicelli tossed in homemade nutty satay sauce. It can be made in just around 20 minutes, making a great option for weekday lunch/ dinner.

Ingredients
 
 

  • 9 ounces rice vermicelli noodles (dry) I use Vietnamese style
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 medium onion thinly sliced
  • 1 pound thinly sliced beef
  • ¼ teaspoon salt
  • 1 tablespoon sake or dry white wine
  • 1 red bell pepper thinly sliced

For satay sauce

  • ¼ cup unsweetened peanut butter natural type
  • ¼ cup tamari soy sauce
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar

For toppings

  • Thinly sliced scallions
  • Crushed peanuts

Instructions
 

  • To make satay sauce, combine the peanut butter, tamari soy sauce, honey and vinegar together in a bowl. Set aside.
  • Cook the rice noodles according to the package. Rinse under cold water to avoid sticking and cooking further. Drain well using a strainer.
  • Heat up the olive oil. Cook the garlic and onion until the onion is slightly tender.
  • Add the beef, salt, and sake. Cook 80% of the way.
  • Add the red bell pepper. Cook for a minute.
  • Add the cooked noodles and satay sauce. Toss gently.
  • Serve with scallions and crushed peanuts.
