Ingredients
 
 

  • 5 ounces gluten-free dry ramen noodles for 2 servings

For the sauce:

  • 2 tablespoons natural peanut butter unsweetened
  • 4 tablespoons rice vinegar 
  • tablespoon tamari soy sauce
  • 2 tablespoon sesame oil
  • 2 teaspoons chili oil
  • 1 tablespoon ground Sichuan pepper

Toppings:

  • Ground Sichuan pepper to taste
  • Thinly sliced scallions
  • Roasted white sesame

Instructions
 

  • Combine all ingredients for the sauce together and stir well.
  • Cook the noodles according to the package. Drain and toss in the sauce.
  • Serve with more ground Sichuan pepper, scallions and sesame on top.

Notes

Make sure the sauce is ready before the noodles are cooked so you can toss them immediately and dig in while they are hot.
