Almond Chai Cake Bars

Ingredients
 
 

  • 2 large eggs
  • ¼ cup coconut sugar
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • cup refined coconut oil melted
  • cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking soda
  • 2 pinches salt
  • teaspoons cardamon powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ginger powder
  • ¼ teaspoon nutmeg

For topping

  • ¼ cup sliced almond

Instructions
 

  • Preheat the oven to 350°F/ 176°C. Line a 9 inch square pan.
  • In a large bowl, whisk the eggs.
  • Add in the coconut sugar, honey, and vanilla extract. Mix well.
  • Pour in the melted coconut oil and mix well.
  • Add in the almond flour, coconut flour, baking soda, salt, and the spices (cardamon, cinnamon, ginger, nutmeg). Mix until just combined. The batter will be very thick.
  • Transfer the batter to the prepared pan. Spread evenly using a spatula or the back of a spoon.
  • Sprinkle the almond slices on top.
  • Bake for 20 minutes. Let cool for at least 30 minutes before cutting in.

Notes

Weigh the ingredients with a kitchen scale if possible for an accurate measuring and consistency in the result.
Do not over bake. They continue to cook after being taken out of the oven.
