    These almond chai cake bars are soft, moist, and packed full of rich aroma from chai spice mix. They are naturally gluten-free, dairy- free, and refined sugar free!

    Almond chai cake bars are incredibly delicious, aromatic, and easy to make in one bowl. They are topped with a plenty of almond slices that add a perfect crunchiness. 

    Made with almond flour and coconut flour, these chai bars are naturally gluten-free, and packed full of fiber. Pair them with a cup of coffee and enjoy as an afternoon snack, or sweet breakfast!

    What is chai?

    Chai is a popular beverage consumed throughout South Asia, originated in India. Its unique aromatic flavor comes from a combination of herbs and spices which includes (but not limited to) cinnamon, cardamon, nutmeg, and ginger. The same spice mix is often used in various baked goods such as cookies and cakes.

    They are absolutely easy to make! All it takes is mixing the ingredients in one bowl and bake.

    They bake fast. It takes just around 20 minutes to bake, which is shorter than typical square pan baking recipes.

    They are healthier. These bars are fiber rich thanks to the almond flour and coconut flour. It is also refined sugar free since honey and coconut sugar are used as sweeteners.

    They are so so so delicious! The rich chai aroma brings these cake bars to the next level. They also stay nice and moist until day three.

    Ingredients for this recipe

    • Eggs
    • Coconut sugar
    • Honey
    • Vanilla extract
    • Refined coconut oil - Refined coconut has no coconut scent (versus unrefined coconut oil does).
    • Almond flour - Use a blanched fine almond flour. Do not use almond meal which has a much coarser texture.
    • Coconut flour 
    • Baking soda
    • Salt

    For chai spice mix

    • Ground cardamom 
    • Cinnamon
    • Ginger powder
    • Nutmeg

    For topping

    • Almond slices

    How to make almond chai cake bars

    1. In a large bowl, whisk the eggs.

    2. Add in the coconut sugar, honey, and vanilla extract. Mix well.

    3. Pour in the melted coconut oil and mix well.

    4. Add in the almond flour, coconut flour, baking soda, salt, and the chai spices. Mix until just combined. The batter will be very thick.

    5. Transfer the batter to the pan. Spread evenly using a spatula or the back of a spoon.

    6. Sprinkle the almond slices on top.

    7. Bake for 20 minutes. Let cool for at least 30 minutes before cutting in.

    Tips for making perfect chai bars

    1. Weigh the ingredients with a kitchen scale for an accurate measuring, especially for the flours.

    2. Do not over bake. They continue to cook after being taken out of the oven.

    3. Make sure to cool well before cutting in. Use a sharp knife to cut them into squares. 

    4. Pair with a scoop of your favorite ice cream. You will not regret it!

    How should I store almond chai cake bars?

    Almond chai cake bars can be stored at room temperature for up to three days, covered tightly. 

    Can they be frozen?

    Yes, chai bars can be frozen for up to 3 months. Make sure to cling wrap them tightly in small batches, and store in a freezer bag. Thaw at room temperature, or microwave to warm up. 

    Can I skip coconut flour?

    Please do not skip! Although it is a small amount, blending coconut flour into almond flour helps to create a finer crumb. Also, since coconut flour is highly absorbent, it helps to balance out the moisture in the cake bars, avoiding them to get oily over the time.

    Ingredients
     
     

    • 2 large eggs
    • ¼ cup coconut sugar
    • ¼ cup honey
    • 1 teaspoon vanilla extract
    • ⅓ cup refined coconut oil melted
    • 1¾ cup almond flour
    • 2 tablespoons coconut flour
    • 1 teaspoon baking soda
    • 2 pinches salt
    • 1¼ teaspoons cardamon powder
    • 1 teaspoon ground cinnamon
    • ½ teaspoon ginger powder
    • ¼ teaspoon nutmeg

    For topping

    • ¼ cup sliced almond

    Instructions
     

    • Preheat the oven to 350°F/ 176°C. Line a 9 inch square pan.
    • In a large bowl, whisk the eggs.
    • Add in the coconut sugar, honey, and vanilla extract. Mix well.
    • Pour in the melted coconut oil and mix well.
    • Add in the almond flour, coconut flour, baking soda, salt, and the spices (cardamon, cinnamon, ginger, nutmeg). Mix until just combined. The batter will be very thick.
    • Transfer the batter to the prepared pan. Spread evenly using a spatula or the back of a spoon.
    • Sprinkle the almond slices on top.
    • Bake for 20 minutes. Let cool for at least 30 minutes before cutting in.
