Ingredients
 
 

For dressing:

  • 2 tablespoons olive oil
  • 3 tablespoons unsweetened cashew yogurt or any non-dairy yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • Pepper to taste

For salad:

  • 4 cups mixed greens packed
  • 1 medium apple chopped

Toppings:

  • ½ cup chopped walnuts
  • Sliced apples
  • Olive oil to drizzle

Instructions
 

  • Combine all ingredients for dressing together and mix well. Set aside.
  • In a large bowl, place the greens and chopped apple. Drizzle the dressing and toss well.
  • Serve on a plate(s). Top with chopped walnuts, sliced apples and drizzle some olive oil.
