Chicken Satay Stir Fry

This easy chicken satay stir fry is made with tender chicken thighs, carrots, sugar snap peas, and creamy nutty satay sauce that is full of rich flavors. Pair up with a warm bowl of rice and dig in!

Ingredients
 
 

  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 medium onion sliced
  • 1 medium carrot cut into match sticks
  • 1 pound boneless skinless chicken thighs chopped
  • ¼ teaspoon salt
  • 2 cups sugar snap peas

For satay sauce

  • ¼ cup peanut butter unsweetened, natural type
  • ¼ cup tamari soy sauce
  • 2 tablespoons rice vinegar
  • 3 tablespoons honey

Toppings

  • Cilantro leaves
  • Crushed peanuts or nuts of your choice

Instructions
 

  • In a small bowl, combine the ingredients for the sauce together and whisk well. Set aside.
  • Heat up the olive oil in a large pan or skillet.
  • Add the garlic, onion and carrots. Cook until the onion and carrots are slightly tender.
  • Add the chicken and salt. Cook fully.
  • Add the sugar snap peas and the seasoning mix. Stir fry until the peas are tender.
  • Serve over rice. Top with cilantro and nuts.

Notes

Rice is not included in the nutrition calculation.
For sugar snap peas, remove the fibrous string running down the seam if preferred. It is usually not necessary for smaller sugar snap peas.
