    This easy chicken satay stir fry is made with tender chicken thighs, carrots, sugar snap peas, and creamy nutty satay sauce that is full of rich flavors. Pair up with a warm bowl of rice and dig in!

    Chicken satay stir fry is the ultimate comforting meal that your whole family will love. Although it is loaded with delicious exotic flavors, the ingredients are pretty simple and the recipe is super easy to follow! 

    Simply stir the fresh ingredients, toss with the peanut butter based satay sauce, and serve over a bed of rice for a truly satisfying meal.

    Ingredients for this recipe

    • Olive oil
    • Garlic - minced
    • Onion - sliced
    • Carrot - cut into matchsticks
    • Boneless skinless chicken thighs
    • Salt
    • Sugar snap peas - remove the fibrous string running down the seam if preferred

    For sauce:

    • Peanut butter - natural, unsweetened type
    • Tamari soy sauce
    • White vinegar
    • Honey

    For toppings:

    • Cilantro leaves
    • Crushed peanuts - or nuts of your choice

    How to make chicken satay stir fry

    Step 1. In a small bowl, combine the ingredients for the sauce together and whisk well. Set aside. 

    Step 2. Heat up the olive oil in a large pan or skillet.

    Step 3. Add the garlic, onion and carrots. Cook until the onion and carrots are slightly tender.

    Step 4. Add the chicken and salt. Cook fully.

    Step 5. Add the sugar snap peas and the seasoning mix. Stir fry until the peas are tender.

    Step 6. Serve over rice. Top with cilantro and nuts.

    FAQ

    What other vegetables can I use?

    Any vegetable that cooks easily (within 2-3 minutes) with a bit of crunch works well with this recipe. Sliced bell peppers, baby corn, cabbage, green beans… Or try with anything you have on hand!

    How long does it keep?

    Chicken satay stir fry can be kept refrigerated for up to 3 days, covered tightly. Warm up in a skillet over low heat, or microwave for a few minutes to reheat.

    • 1 tablespoon olive oil
    • 2 cloves garlic minced
    • 1 medium onion sliced
    • 1 medium carrot cut into match sticks
    • 1 pound boneless skinless chicken thighs chopped
    • ¼ teaspoon salt
    • 2 cups sugar snap peas

    For satay sauce

    • ¼ cup peanut butter unsweetened, natural type
    • ¼ cup tamari soy sauce
    • 2 tablespoons rice vinegar
    • 3 tablespoons honey

    Toppings

    • Cilantro leaves
    • Crushed peanuts or nuts of your choice

    For sugar snap peas, remove the fibrous string running down the seam if preferred. It is usually not necessary for smaller sugar snap peas.
