Ingredients
 
 

  • 4 Earl Grey tea bags
  • cup boiled water 
  • 3 small ripe bananas peeled and mashed, about 1 ¼ cup
  • 2 large eggs
  • ½ cup coconut sugar 
  • 3 tablespoons avocado oil or any neutral tasting oil
  • 1 teaspoon vanilla extract
  • 1 cup blanched almond flour
  • ½ cup gluten-free all purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Instructions
 

  • Preheat the oven to 350°F/ 177°C. Line a standard loaf pan (8.5 inch).
  • Open up the tea bags and transfer the leaves to a small cup. Pour boiled water over the tea leaves and let steep for at least 5 minutes.
  • In a large bowl, place the mashed bananas, eggs, coconut sugar and whisk well.
  • Add in the avocado oil, vanilla, and the mix of tea leaves and water from step 2.
  • Stir in the almond flour, all-purpose flour, baking soda and salt. Mix well.
  • Pour the batter into the prepared pan. Bake for 45 - 50 minutes or until an inserted toothpick comes out clean.
