These delicious dan dan noodles are served in umami rich creamy soup with numbing spicy ground meat on top. The tingling sensation from the Sichuan pepper will surely boost your appetite! This recipe is free of gluten and dairy.
1cupchicken broth from carton or chicken bouillon powder mixed into water
1cupsoy milk
1teaspoonstamari soy sauceor more
Noodles:
5ouncesgluten-free ramen noodlesor for two servings, dry
Optional toppings:
Chopped scallion
Toasted white or black sesame

Instructions
Combine the gochujang, miso, and tamari soy sauce together and set aside.
Heat up the sesame oil in a pan. Cook the garlic until fragrant.
Add in the ground pork. When its color starts to change, add in the seasoning mix from step 1. Mix in the ground Sichuan pepper as well.
To make the broth, bring the chicken broth and soy milk to a boil in a saucepan. Mix the tahini and chili oil in a cup, then stir into the broth. Adjust the flavor with tamari.
Cook the noodles according to the package. Drain and split into two bowls.
Pour the broth over the noodles. Top with cooked ground meat.
Optional: top with more Sichuan pepper, chopped scallion and sesame.
Notes
Gochujang can be substituted with either thick chili sauce such as Sriracha, or a mix of 1 teaspoon miso + 1 teaspoon chili flakes.
