    If you are craving for a bowl of comforting noodles, this is the perfect option. These Chinese-inspired noodles are so quick and easy to make yet packed full of irresistible flavors.

    There is numbing spiciness, sweetness, and umami, blended all in one bowl. I guarantee you would be going back to this recipe again and again!

    The addictive broth

    The umami rich broth is made with chicken broth seasoned with chili oil and tamari soy sauce. There is a nice creaminess added from tahini and soy milk as well. It is just so flavorful, and the little heat in the broth warms you up instantly. 

    Tingling numbing spiciness

    Sichuan pepper is the star ingredient here. While adding a gentle spiciness to the food, it leaves a numbing, soothing sensation in the mouth.

    To get the most out of this aromatic spice, make sure to use freshly ground Sichuan pepper rather than a pre-ground type. Use a pepper grinder or small grinding bowl to for grinding. I highly recommend stocking up on Sichuan peppercorns because it really goes great on everything!

    Ingredients for this recipe

    • Gochujang - Make sure to use a gluten-free type if you are sensitive. See the bottom of recipe card for substitutions.
    • Miso
    • Tamari
    • Sesame oil
    • Garlic
    • Ground pork
    • Ground Sichuan pepper - highly recommend grinding Shichuan peppercorns
    • Tahini sauce - or creamy unsweetened peanut butter
    • Chili oil
    • Chicken broth - either from carton or chicken bouillon powder mixed into water
    • Soy milk
    • Gluten-free ramen noodles

    Optional toppings

    • Chopped scallion
    • Toasted white or black sesame

    How to make Brothy Dan Dan Noodles

    1. Make the meat topping: Cook the garlic, then add in the ground pork. Season with gochujang, miso, tamari, and ground Sichuan pepper.

    2. Make the broth: Bring the chicken broth and soy milk to a boil in a saucepan. Add in the tahini and chili oil, then adjust the flavor with tamari.

    3. Cook the noodles: Drain well and split into two bowls.

    4. Serve: Pour the broth over noodles. Top with cooked pork, more Sichuan pepper, chopped scallion and sesame.

    Ingredients
     
     

    For meat topping:

    • 1 teaspoon gochujang paste see below for sub options
    • 2 teaspoons miso paste
    • 1 teaspoon tamari
    • 2 teaspoons sesame oil
    • 2 cloves garlic, minced
    • ½ pound ground pork
    • 2 teaspoons freshly ground Sichuan pepper

    Broth:

    • 2 tablespoons tahini sauce or creamy unsweetened peanut butter
    • 1 tablespoon chili oil
    • 1 cup chicken broth from carton or chicken bouillon powder mixed into water
    • 1 cup soy milk
    • 1 teaspoons tamari soy sauce or more

    Noodles:

    • 5 ounces gluten-free ramen noodles or for two servings, dry

    Optional toppings:

    • Chopped scallion
    • Toasted white or black sesame

    Instructions
     

    • Combine the gochujang, miso, and tamari soy sauce together and set aside.
    • Heat up the sesame oil in a pan. Cook the garlic until fragrant.
    • Add in the ground pork. When its color starts to change, add in the seasoning mix from step 1. Mix in the ground Sichuan pepper as well.
    • To make the broth, bring the chicken broth and soy milk to a boil in a saucepan. Mix the tahini and chili oil in a cup, then stir into the broth. Adjust the flavor with tamari.
    • Cook the noodles according to the package. Drain and split into two bowls.
    • Pour the broth over the noodles. Top with cooked ground meat.
    • Optional: top with more Sichuan pepper, chopped scallion and sesame.

    Notes

    Gochujang can be substituted with either thick chili sauce such as Sriracha, or a mix of 1 teaspoon miso + 1 teaspoon chili flakes.
