Matcha Macadamia Almond Flour Cookies

These matcha macadamia cookies are soft and chewy in the center. Baked with just almond flour, they are perfectly gluten-free (and dairy-free)!

Ingredients
 
 

  • ½ cup vegan butter softened
  • cup organic cane sugar
  • ¼ cup dark brown sugar
  • 1 large egg
  • 2 tablespoons matcha powder
  • cup almond flour
  • ½ teaspoon baking soda
  • 1 cup roughly chopped salted macadamia nuts

Instructions
 

  • Preheat the oven to 350°F/ 177°C. Line two baking sheet pans.
  • In a large bowl, combine the butter, cane sugar and brown sugar together and whisk well.
  • Add in the egg and matcha powder. Mix well.
  • Add in the almond flour and baking soda. Mix until well combined.
  • Split the dough into 12 balls and place on the baking pans. Flatten the top and arrange macadamia nuts on top.
  • Bake for 11-14 minutes. Cookies come out soft but will firm up as they cool.

Notes

If you would like to make 24 smaller cookies, shorten the baking time to 9-10 minutes.
