How to make matcha macadamia cookies
I love it that this recipe is super simple yet they come out so delicious every single time.
Once you combine the butter and sugar together, egg and matcha goes into the bowl as well. Then you just need to add the almond flour and baking soda, split them into 12 and bake. Freshly baked cookies come out very soft but they firm up nicely once they are cooled.
Here are the steps:
1. Preheat the oven to 350°F/ 177°C. Line two baking sheet pans.
2. In a large bowl, combine the butter, cane sugar and brown sugar together and whisk well.
3. Add in the egg and matcha. Mix well.
4. Add in the almond flour and baking soda and mix until well combined.
5. Split the dough into 12 balls and place them on the baking pans. Flatten the top and arrange macadamia nuts on top.
6. Bake for about 12 minutes. The cookies come out soft but they will firm up once cooled.
How to store these cookies
These matcha cookies stay fresh covered at room temperature for up to 3-4 days. They can also be baked and frozen for up to 2 months. Microwave for 20-30 seconds to warm up the cookies.
