Matcha pudding parfait is the perfect breakfast option for matcha lovers. It has a smooth rich pudding layer at the bottom with blueberries, granolas, and coconut yogurt on top! This recipe is gluten-free and vegan.
½cupsugar of your choice anything with a lighter color recommended
1½teaspoonagar agar powder
Toppings:
1cupgluten-free granola
2cupsfresh blueberries
Coconut yogurt or any non dairy yogurt
Matcha powder for dusting

Instructions
Combine the matcha and water together and mix well. Set aside.
In a medium saucepan, combine the oat milk, sugar and agar powder together and mix. Bring the mix to a full boil, stirring constantly. Once it boils, lower the heat immediately and let simmer for 2-3 minutes until the agar and sugar completely dissolve.
Add in the matcha + water mix and stir well.
Pour the mix into cups and chill for 1 hour or until the pudding sets.
Top with blueberries, granola, and yogurt. Dust with matcha powder.
