Matcha pudding parfait is the perfect breakfast option for matcha lovers. It has a smooth rich pudding layer at the bottom with blueberries, granolas, and coconut yogurt on top! This recipe is gluten-free and vegan.

Equipment

  • 4 x 16oz cups

Ingredients
 
 

  • 2 tablespoons matcha powder unsweetened type
  • ¼ cup water
  • 3 cups oat milk or any non dairy milk
  • ½ cup sugar of your choice anything with a lighter color recommended
  • teaspoon agar agar powder

Toppings:

  • 1 cup gluten-free granola
  • 2 cups fresh blueberries 
  • Coconut yogurt or any non dairy yogurt
  • Matcha powder for dusting

Instructions
 

  • Combine the matcha and water together and mix well. Set aside.
  • In a medium saucepan, combine the oat milk, sugar and agar powder together and mix. Bring the mix to a full boil, stirring constantly. Once it boils, lower the heat immediately and let simmer for 2-3 minutes until the agar and sugar completely dissolve.
  • Add in the matcha + water mix and stir well.
  • Pour the mix into cups and chill for 1 hour or until the pudding sets.
  • Top with blueberries, granola, and yogurt. Dust with matcha powder.

Notes

This recipe makes 4 parfaits in 16oz cups.
