    Matcha Pudding Parfait

    Matcha pudding parfait is the perfect breakfast option for matcha lovers. It has a smooth rich pudding layer at the bottom with blueberries, granolas, and coconut yogurt on top.

    Have a big parfait for breakfast. Does that sound too much? Definitely not if it’s loaded with healthy, energy boosting ingredients.

    The pudding layer is made with matcha and oat milk, set perfectly with agar powder. Any type of sugar can be used as a sweetener, but something with a lighter color would work great to let the vibrant matcha color shine.

    To have this for breakfast, you can make the pudding layer on the night before. Simply heat up the mixture in a saucepan, pour it into the cups and refrigerate.

    In the morning, stack the layers of fresh blueberries, crunchy granolas, and creamy coconut yogurt over the pudding. Dust with more matcha powder and dive in!

    Ingredients for this recipe

    For the pudding layer:

    • Matcha powder
    • Water
    • Unsweetened oat milk - or any non dairy milk
    • Sugar of your choice - I've had success with both cane sugar and calorie free monk fruit sugar
    • Agar agar powder

    For toppings:

    • Gluten free granola
    • Fresh blueberries
    • Coconut yogurt - or any non dairy yogurt
    • Matcha powder for dusting

    How to make matcha pudding parfait

    1. Combine the matcha and water together and mix well. Set aside.

    2. Combine the oat milk, sugar and agar powder together in a saucepan and mix.

    3. Bring the mix to a full boil. Then lower the heat immediately and let simmer for 2-3 minutes until the agar and sugar completely dissolve.

    4. Add in the matcha + water mix and stir well.

    5. Pour the mix into cups and refrigerate for 1 hour or until it sets.

    6. Top with blueberries, granola, and yogurt of your choice. Dust with more matcha powder.

    Tips for making matcha pudding parfait

    • Make sure to mix the matcha and water well to avoid clumping in the mixture.
    • Key to a nice smooth texture is to dissolve the agar powder completely.

    Make ahead option

    The matcha pudding layer can be made up to 3 days in advance and kept in the fridge. Wrap tightly to prevent a film forming on the surface.

    Ingredients
     
     

    • 2 tablespoons matcha powder unsweetened type
    • ¼ cup water
    • 3 cups oat milk or any non dairy milk
    • ½ cup sugar of your choice anything with a lighter color recommended
    • 1½ teaspoon agar agar powder

    Toppings:

    • 1 cup gluten-free granola
    • 2 cups fresh blueberries 
    • Coconut yogurt or any non dairy yogurt
    • Matcha powder for dusting

    Instructions
     

    • Combine the matcha and water together and mix well. Set aside.
    • In a medium saucepan, combine the oat milk, sugar and agar powder together and mix. Bring the mix to a full boil, stirring constantly. Once it boils, lower the heat immediately and let simmer for 2-3 minutes until the agar and sugar completely dissolve.
    • Add in the matcha + water mix and stir well.
    • Pour the mix into cups and chill for 1 hour or until the pudding sets.
    • Top with blueberries, granola, and yogurt. Dust with matcha powder.
