This no-bake lime yogurt tart is rich, creamy, and packed full of citrus flavor. Enjoy with the healthy delicious crust made with oatmeal! This recipe is gluten-free, vegan, and refined sugar free.
1½cupunsweetened cashew yogurtor any dairy-free yogurt
Zest from 2 limes
Optional toppings:

Instructions
To make the crust
Place all ingredients for the crust in a food processor and pulse until fine. Press the mixture into a 9 inch tart pan. Refrigerate while you make the filling.
To make the filling
In a saucepan, combine the lime juice, oat milk, maple syrup and agar powder together. Bring to a full boil, stirring constantly. Once the mixture boils, immediately bring down to low heat and simmer for 2-3 minutes until the agar has completely dissolved.
Add the yogurt and lime zest into the saucepan, stirring constantly.
To assemble
Pour the mixture into the crust. Refrigerate for 1 hour or until it sets. Optional: garnish with lime slices and crushed cashew nuts.
Notes
Make sure to zest the limes before squeezing out the juice!
