What is no-bake lime yogurt tart?
If you are a citrus dessert fan, you must try this recipe. This lime yogurt tart has a silky smooth filling made with plant based yogurt, fresh lime juice and maple syrup. Its nutty oatmeal tart crust is loaded with healthy fiber rich ingredients such as oats, pecans, and ground flaxseed. Plus, it is naturally sweetened with dates and maple syrup.
It is so light and refreshing yet creamy. And the best part is that it requires no baking time which makes it a perfect dessert when in a pinch or during hot summer days.
How do I set this tart?
For this recipe, I am using agar powder to set the filling. Agar can be used as a vegan-friendly substitute in any recipe that calls for gelatin, creating a perfect jelly like texture. A little goes a long way, and you will only need 1 teaspoonful to set the entire filling. Make sure that the powder is completely dissolved in the filling mix, otherwise the tart may not set properly.
Ingredients and substitutes
- Gluten-free old fashioned oatmeal
- Pecans
- Pitted dates
- Ground flaxseed
- Refined coconut oil
- Maple syrup
- Oat milk - If you are substituting with other non-dairy milk, I recommend a richer type such as soy milk.
- Zest from 2 limes - Make sure to zest the limes BEFORE squeezing out lime juice.
- Freshly squeezed lime juice - from 4 to 5 limes. You can use bottled lime juice as well but there will be less flavor.
- Agar agar powder - Use a fine powder type. After trying multiple brands, my favorite has been this one as it dissolves easily into the liquid.
- Cashew yogurt - Any non dairy yogurt works. Make sure to use an unsweetened type.

How to make lime yogurt tart
1. Make the crust. Place all ingredients for the crust in a food processor and pulse until fine. Press the mixture into a 9 inch tart pan. Refrigerate while you make the filling.
2. Make the filling. In a saucepan, combine the lime juice, oat milk, maple syrup and agar powder together. Simmer for 2-3 minutes until agar has completely dissolved. Then add in the yogurt and lime zest, stirring constantly.
4. Assemble and chill. Pour the mixture into the crust. Refrigerate for 1 hour or until it sets. Optional: garnish with lime slices and crushed cashews.

Agar is a thickening, stabilizing agent that works similar to gelatin but made from a plant based ingredient - red algae (a type of seaweed). It is used in various desserts and jellies to set the mix.

- ¾ cup pecans
- 1 cup pitted dates

- ⅓ cup maple syrup
- ¼ cup freshly squeezed lime juice from 4-5 limes
- 1 teaspoon agar agar powder
- 1½ cup unsweetened cashew yogurt or any dairy-free yogurt

Instructions
To make the crust
- Place all ingredients for the crust in a food processor and pulse until fine. Press the mixture into a 9 inch tart pan. Refrigerate while you make the filling.
To make the filling
- In a saucepan, combine the lime juice, oat milk, maple syrup and agar powder together. Bring to a full boil, stirring constantly. Once the mixture boils, immediately bring down to low heat and simmer for 2-3 minutes until the agar has completely dissolved.
- Add the yogurt and lime zest into the saucepan, stirring constantly.
To assemble
- Pour the mixture into the crust. Refrigerate for 1 hour or until it sets. Optional: garnish with lime slices and crushed cashew nuts.
