One Pan Cod in Miso Garlic Sauce

One pan cod is seared to perfection and simmered in delicious creamy miso garlic sauce. It is an easy Asian inspired meal that’s ready in under 30 minutes!

Ingredients
 
 

  • cup unsweetened soy milk or any non dairy milk
  • 2 tablespoons miso
  • 1 tablespoon tamari soy sauce
  • 2 tablespoons avocado oil or olive oil
  • 2 pounds Atlantic cod 3-4 fillets
  • ½ teaspoon salt used in 2 portions
  • 1 medium onion minced
  • 3 cloves garlic minced

Optional toppings:

  • Cilantro
  • Shichimi peppers

Instructions
 

  • Combine the soy milk, miso and tamari soy sauce together in a cup. Set aside.
  • Pat dry the cod fillets well with paper towels.
  • Heat up the avocado oil in a pan. Sear the cod fillets for about 3 minutes on each side, sprinkling ¼ teaspoon salt on each side. Transfer the fish to a plate.
  • Using the same pan, cook the onion and garlic until fragrant (add more oil if necessary). Add in the sauce mix from step 1 and bring to a boil.
  • Add the cod back into the sauce. Let simmer for 3-4 minutes, pouring the sauce over the fish with a spoon constantly. 
  • Optional: top with cilantro, and shichimi peppers.

Notes

Avocado oil is recommended for this recipe since it has a higher smoking point than olive oil. However, olive oil or any neutral tasting oil such as canola works as well.
