This is a perfect quick dish whenever you are craving an easy seafood meal. The cod is seared to perfection, then simmered in delicious sauce with garlic, onion and miso.
Thanks to soy milk, the sauce is rich and creamy without using any dairy. It is packed full with umami rich flavors, delicate, satisfying yet super easy to put together in under 30 minutes.
Serve the fish over a bowl of warm rice, pour a plenty of sauce and dig in!

Can I use other fish?
Yes totally! Any white fish such as salmon(Atlantic or pink), tilapia, halibut, bass, or Dover sole fillets work perfectly. Adjust the searing time according to the thickness of the cuts you are using.

How to make cod in miso garlic sauce
1. Prepare the cod. Pat dry the cod filets well with paper towels.
2. Sear. Sear the cod for about 3 minutes on each side. Transfer the fish to a plate.
3. Make the sauce. Cook onion and garlic using the same pan. Add in the sauce mix and bring to a boil.
4. Simmer. Add the cod back into the sauce. Let simmer for 3-4 minutes, pouring the sauce over the fish with a spoon constantly.
5. Serve. Top with cilantro, and shichimi peppers (optional)!

Tips
- Pat dry the fish well before cooking. This greatly helps to get rid of any fishy flavor. It also allows the surface to brown evenly during the searing as well.
- Make sure the pan is really hot. Searing the fillets on a hot surface helps to keep them stay in shape. Try not to touch too often as cod fillets are very delicate!
Frequently asked questions
I normally use a large 12-inch pan for this recipe. If your go-to pan is smaller, you can work in batches for the searing step if that makes it easier. For the simmering part, the filets can be arranged tightly so they all fit in together.
Any leftover can be stored in an airtight container and refrigerated for up to 3 days. Microwave or heat up on the stovetop in a pan.

One Pan Cod in Miso Garlic Sauce
Ingredients
- 1½ cup unsweetened soy milk or any non dairy milk
- 2 tablespoons miso
- 1 tablespoon tamari soy sauce
- 2 tablespoons avocado oil or olive oil
- 2 pounds Atlantic cod 3-4 fillets
- ½ teaspoon salt used in 2 portions
- 1 medium onion minced
- 3 cloves garlic minced
Optional toppings:
- Cilantro
- Shichimi peppers
Instructions
- Combine the soy milk, miso and tamari soy sauce together in a cup. Set aside.
- Pat dry the cod fillets well with paper towels.
- Heat up the avocado oil in a pan. Sear the cod fillets for about 3 minutes on each side, sprinkling ¼ teaspoon salt on each side. Transfer the fish to a plate.
- Using the same pan, cook the onion and garlic until fragrant (add more oil if necessary). Add in the sauce mix from step 1 and bring to a boil.
- Add the cod back into the sauce. Let simmer for 3-4 minutes, pouring the sauce over the fish with a spoon constantly.
- Optional: top with cilantro, and shichimi peppers.
