Ingredients
 
 

  • ½ pound gluten-free short pasta dry
  • cup almond milk yogurt or any non dairy yogurt
  • ½ cup mayonnaise
  • 2 tablepsoons Thai red curry powder or more
  • 1 tablespoon lemon juice
  • 2 teaspoons honey
  • 2 teaspoons fish sauce
  • ½ cup craisins (dried cranberry) or raisins
  • ½ red bell pepper diced small
  • 1 medium carrot peeled and grated

Optional toppings

  • Thinly sliced red onion
  • Ground black pepper
  • Smoked paprika powder

Instructions
 

  • Cook the pasta according to the package. Rinse under cold water to avoid cooking further. Drain and set aside.
  • To make the dressing, combine the yogurt, mayonnaise, red curry powder, lemon juice, honey, fish sauce together, and mix well.
  • In a large bowl, place the cooked pasta, bell pepper, carrot, and craisins. Drizzle the dressing and toss.
  • Serve on a plate and top with red onion slices, smoked paprika powder, and black pepper.
