½ pound gluten-free short pasta dry ⅓ cup almond milk yogurt or any non dairy yogurt ½ cup mayonnaise 2 tablepsoons Thai red curry powder or more 1 tablespoon lemon juice 2 teaspoons honey 2 teaspoons fish sauce ½ cup craisins (dried cranberry) or raisins ½ red bell pepper diced small 1 medium carrot peeled and grated Optional toppings Thinly sliced red onion Ground black pepper Smoked paprika powder

Cook the pasta according to the package. Rinse under cold water to avoid cooking further. Drain and set aside.
To make the dressing, combine the yogurt, mayonnaise, red curry powder, lemon juice, honey, fish sauce together, and mix well.
