    This red curry pasta salad is such a great option when you want to change up your usual pasta recipe. It is fragrant from the red curry spice mix, creamy yet light, and the pockets of sweetness from dried cranberries really balances out the flavor. 

    All it takes is cooking short pasta of your choice, and tossing it with homemade creamy curry dressing in a bowl!

    Red curry powder is a dry mix of powder that is often used in Thai cuisine. Its flavor varies slightly by brand, but it has an earthy, aromatic, and spicy tone. Despite its bright red hue, the spiciness is not as intense.

    It is a great spice when you need a shortcut to an exotic Thai inspired dish, and works well in a dry rub, quick curry, soup, or even in a dip. It can be found easily at larger local grocery stores in the states.

    Ingredients for this recipe

    • Gluten-free short pasta
    • Almond milk yogurt, or any non dairy yogurt
    • Mayonnaise
    • Thai red curry powder
    • Lemon juice
    • Honey
    • Fish sauce
    • Craisins, or raisins
    • Red bell pepper
    • Medium carrot

    Optional toppings

    • Thinly sliced red onion
    • Ground black pepper
    • Smoked paprika powder

    How to make red curry pasta salad

    Step 1. Cook the pasta according to the package. Rinse under cold water to avoid cooking further. Drain and set aside.

    Step 2. To make the dressing, combine the yogurt, mayonnaise, red curry powder, lemon juice, honey, fish sauce together, and mix well.

    Step 3. In a large bowl, place the cooked pasta, bell pepper, carrot, and craisins. Drizzle the dressing and toss.

    This pasta salad can be refrigerated for up to 3 days, stored in an air tight container. However, gluten-free pasta tends to become firmer and drier when chilled. To soften the texture again, leave on the counter for 30 minutes or so, or microwave to 10-20 seconds (watch closely) to bring back to room temperature.
