Shrimp Chicken Fried Rice

Ingredients
 
 

  • ½ pound medium shrimp peeled and deveined
  • ½ pound boneless skinless chicken thighs cut into bite size pieces
  • 2 teaspoons sake (cooking sake) or dry white wine
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • ½ medium red onion minced
  • 4 cups cooked rice I use Japanese rice
  • 2 tablespoons tamari soy sauce
  • 1 tablespoon sesame oil

Optional toppings

  • White pepper
  • Thinly sliced scallions

Instructions
 

  • Pat dry the shrimp with paper towels. In a bowl, combine the chicken, sake, and salt in a bowl together to season.
  • In a large pan or wok, heat up the olive oil. Cook the garlic and red onion until fragrant.
  • Add in the chicken and cook 80% of the way.
  • Add in the shrimp and cook fully.
  • Add the rice, tamari soy sauce, and sesame oil. Stir-fry until everything is well combined.
  • Optional: top with white pepper and scallions.

Notes

To prevent burning, you will be working fast once you start adding ingredients into the pan. Make sure everything is ready to go before you start cooking.
