½poundboneless skinless chicken thighscut into bite size pieces
2teaspoonssake (cooking sake)or dry white wine
½teaspoonsalt
1tablespoonolive oil
2clovesgarlicminced
½mediumred onionminced
4cups cooked riceI use Japanese rice
2tablespoonstamari soy sauce
1tablespoonsesame oil

Instructions
Pat dry the shrimp with paper towels. In a bowl, combine the chicken, sake, and salt in a bowl together to season.
In a large pan or wok, heat up the olive oil. Cook the garlic and red onion until fragrant.
Add in the chicken and cook 80% of the way.
Add in the shrimp and cook fully.
Add the rice, tamari soy sauce, and sesame oil. Stir-fry until everything is well combined.
Optional: top with white pepper and scallions.
Notes
To prevent burning, you will be working fast once you start adding ingredients into the pan. Make sure everything is ready to go before you start cooking.
