Spicy Ground Chicken Stir Fry

This Thai-inspired ground chicken stir fry is an easy, delicious dish that is ready in 20 minutes. It is mildly spicy, savory, sweet and sour, cooked with baby corn and bell pepper. Serve with rice or carb of your choice to make it into a full meal!

Ingredients
 
 

  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 pound ground chicken
  • 1 large red bell pepper sliced thinly
  • cup halved baby corn fresh or canned
  • 2 tablespoons fish sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon tamari soy sauce
  • 2 tablespoons honey
  • 2 teaspoons chili powder or more

Toppings

  • Cilantro leaves
  • Red pepper flakes

Instructions
 

  • Heat up the oil in a large pan. Cook the garlic until fragrant.
  • Add the ground chicken and cook 80% of the way.
  • Add the bell pepper, baby corn, fish sauce, rice vinegar, soy sauce, honey, and chili powder. Cook over high heat for 1-2 minutes until all ingredients are well combined.
  • Serve over rice. Top with cilantro and red pepper flakes.
