Ingredients
 
 

For dressing

  • 2 tablespoons tamari soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • ½ teaspoon sugar
  • Salt to taste
  • Ground pepper to taste

For salad

  • 4 cups baby spinach packed
  • 1 cup canned mandarin orange drained
  • ½ yellow bell pepper thinly sliced

For topping

  • 3 tablespoons crushed pistachios or other nuts

Instructions
 

  • Combine all the dressing ingredients together in a cup. Set aside.
  • In a large bowl, place the baby spinach and drizzle the dressing mix. Toss well.
  • On a large plate, arrange the tossed spinach, orange, and bell pepper.
  • Top with crushed pistachios. Serve immediately.
