Equipment

  • 1 x baking sheet pan

Ingredients
 
 

  • pound Atlantic salmon fillets I use 4 x 6oz (170g) fillets
  • ¼ teaspoon Salt
  • Ground pepper to taste
  • tablespoon coconut sugar or any sugar
  • 2 tablespoons sake (rice wine) or dry white wine
  • 2 tablespoons miso
  • 2 tablespoons avocado oil

Instructions
 

  • Preheat the oven to 370°F/ 188°C. Line a baking sheet pan with aluminum foil or parchment paper.
  • Pat dry the salmon fillets well with paper towels. Place them on the baking pan, with the skin side down if any. Sprinkle salt and pepper over the fish. 
  • In a small cup, combine the coconut sugar, sake and miso together. Spread the mix on top of salmon.
  • Drizzle the avocado oil over salmon.
  • Bake for 17-20 minutes. Serve with rice or vegetables of your choice.
