The glazing sauce is super easy to put together with just three ingredients - sugar, sake and miso. Simply mix them all together in a cup and slather onto the salmon. Then drizzle some avocado (or olive) oil over the fish and they can go straight into the oven.
Needless to say, this dish goes well with freshly cooked Japanese rice. But it works great with other grains such as quinoa, or it can even go on a bed of salad leaves.

Baking vs pan frying salmon
I feel like baking is the way to go when it comes to cooking multiple salmon fillets. If baked at the right temperature, they come out more moist with less oil compared to pan fried fillets.
With baking, you won't have to worry about breaking the delicate fish during the flipping. Also, you can line the baking sheet with parchment paper or aluminum foil to make the cleaning a breeze.
But more than anything, being able to cut down on hands-on cooking time is the most important thing on a busy day right?
Which salmon works the best?
I love to use Atlantic salmon as it is higher in fat which makes it more tender and juicier. If you cannot find fresh salmon, frozen fillets work just as fine. Those individually packaged salmon fillets sold in the frozen section are amazingly convenient.
Make sure to thaw them completely before putting in the oven.

- Atlantic salmon fillets - Make sure to thaw ahead of time if using a frozen type.
- Salt & pepper
- Coconut sugar - or sugar of your choice
- Sake (rice wine) - or dry white wine
- Miso
- Avocado oil - or olive oil
How to make sweet miso glazed salmon
1. Prepare the salmon. Pat dry the salmon fillets well with paper towels. Place them on the baking pan, with the skin side down if any. Sprinkle salt and pepper over the fish.
2. Make the sauce. In a small cup, combine the coconut sugar, sake and miso together. Spread the mix on top of the salmon.
3. Add oil. Drizzle the avocado oil over salmon.
4. Bake. Bake for 17-20 minutes. Serve with rice or vegetables of your choice!

Frequently asked questions
Cooked miso glazed salmon can be stored in the fridge for up to 2 days in an airtight container. Microwave, or cook over the stove top for a few minutes to heat up.
I like to use yellow miso as it has the best balance of saltiness and funky umami flavor. White miso makes the sauce taste milder and sweeter, whereas red miso adds more robust savory flavor.

Sweet Miso Glazed Salmon
Equipment
- 1 x baking sheet pan
Ingredients
- 1½ pound Atlantic salmon fillets I use 4 x 6oz (170g) fillets
- ¼ teaspoon Salt
- Ground pepper to taste
- 1½ tablespoon coconut sugar or any sugar
- 2 tablespoons sake (rice wine) or dry white wine
- 2 tablespoons miso
- 2 tablespoons avocado oil
Instructions
- Preheat the oven to 370°F/ 188°C. Line a baking sheet pan with aluminum foil or parchment paper.
