Ingredients
 
 

For teriyaki chicken

  • 3 tablespoons mirin
  • 2 tablespoons tamari soy sauce
  • 1 tablespoon sugar
  • ½ pound boneless skinless chicken thighs 2 pieces
  • ¼ teaspoon salt
  • 2 teaspoons olive oil
  • 1 clove garlic minced

For burgers

  • 4 leaves little gem lettuce or regular lettuce torn smaller
  • ¼ cup pickled red onion homemade or store bought
  • 2 gluten free burger buns lightly toasted, I like Schar brand

Instructions
 

For chicken

  • In a small cup, combine the mirin, tamari soy sauce, and sugar together and set aside.
  • Rub salt into the chicken.
  • Heat up the olive oil in a small pan, and cook the garlic until fragrant. Then add in the chicken and cook well on both sides.
  • Pour the seasoning mix over the chicken and cook until the sauce thickens and becomes glossy.

To assemble

  • Place lettuce leaves on the bottom buns, followed by teriyaki chicken, leftover teriyaki sauce in the pan, pickled onion, and the top buns.
