Ingredients for this recipe
- Mirin
- Tamari soy sauce
- Sugar
- Boneless skinless chicken thighs
- Salt
- Olive oil
- Garlic - Minced
- Little gem lettuce - Or regular lettuce torn smaller
- Pickled red onion - Homemade or store bought
- Gluten-free burger buns - Toasted, I like Schar brand
How to make teriyaki chicken burgers
1. Make teriyaki sauce mix. In a small cup, combine the mirin, tamari soy sauce, and sugar together and set aside.
2. Salt the chicken. Rub salt into the chicken.
3. Sear the chicken. Heat up the olive oil in a small pan, and cook the garlic until fragrant. Then add in the chicken and cook well on both sides.
4. Add teriyaki sauce. Pour the seasoning mix over the chicken and cook until the sauce thickens and becomes glossy.


5. Assemble. Place lettuce leaves on the bottom buns, followed by teriyaki chicken, leftover teriyaki sauce in the pan, pickled onion, and the top buns.

Ingredients
For teriyaki chicken
- 3 tablespoons mirin
- 2 tablespoons tamari soy sauce
- 1 tablespoon sugar
- ½ pound boneless skinless chicken thighs 2 pieces
- ¼ teaspoon salt
- 2 teaspoons olive oil
- 1 clove garlic minced
For burgers
- 4 leaves little gem lettuce or regular lettuce torn smaller
- ¼ cup pickled red onion homemade or store bought
- 2 gluten free burger buns lightly toasted, I like Schar brand
Instructions
