This Japanese inspired tofu avocado salad is an incredibly delicious and healthy dish that comes together in 15 minutes! It is drizzled with creamy sesame dressing made from scratch. This recipe is gluten-free and vegan.

Ingredients
 
 

For dressing

  • 2 tablespoons tahini
  • 2 tablespoons water
  • 1 tablespoon tamari
  • 1 tablespoon lemon juice
  • 1 tablespoon sesame oil
  • 1 teaspoon maple syrup

For salad

  • 2 cups mixed greens packed
  • 1 cup red cabbage thinly sliced and packed
  • 8 ounces extra firm tofu cut in cubes

Toppings

  • 1 large avocado in cubes
  • ½ sheet nori seaweed torn into small pieces
  • 1 teaspoon Toasted white sesame
  • Ground pepper to taste

Instructions
 

  • Combine all ingredients for dressing together. Mix well and set aside.
  • Pat down the tofu cubes with paper towels. Place the salad leaves and tofu in a large bowl, and drizzle half of the dressing (adjust to your preference). Toss well.
  • Arrange the salad on a plate(s). Top with avocado, nori, sesame, and ground pepper. Drizzle more dressing if desired.

Notes

This recipe makes a generous portion (⅓ cup) of dressing. Left over dressing can be stored in the fridge for up to 5 days.
