How to use tofu in salads
A little tip here is to take moisture out of the tofu as much as possible before adding to your salad. This prevents the entire dish getting wet and soggy. All you need to do is pat down the tofu cubes with paper towels (cheese cloth or anything) and make sure the surface is dry. It's a little process that makes a huge difference!

For dressing:
- Tahini
- Water
- Tamari
- Lemon juice - recommend to use freshly squeezed juice but bottled lemon juice works just as fine.
- Sesame oil
- Maple syrup
For salad:
- Mixed greens
- Red cabbage
- Extra firm tofu
For toppings:
- Avocado
- Nori seaweed
- Toasted white sesame
- Pepper
How to make tofu avocado salad
1. Make the dressing. Combine all ingredients for dressing and mix well. Set aside.
2. Toss. Pat down the tofu cubes with paper towels. Place the salad leaves and tofu in a large bowl. Drizzle half of the dressing (adjust depending on your preference). Toss well.
3. Top and serve. Arrange the salad on a plate(s). Top with avocado, nori, sesame, and pepper. Add more dressing on top if desired.
Make ahead tips
The dressing can be made in advance and stored in an airtight container for up to 3-5 days in the fridge. Stir well before using.
I highly recommend making the salad right before serving. This is because the avocado starts to brown as it sits, and the mixed leaves wilt over time especially with the dressing.
However, you can prepare and store the vegetables separately if you wish to get everything done ahead of time. You can minimize the avocado's browning by drizzling a little amount of lemon juice.

Ingredients
For dressing
- 2 tablespoons tahini
- 2 tablespoons water
- 1 tablespoon tamari
