Ingredients
 
 

  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons honey or maple syrup for a vegan option
  • Salt and pepper to taste
  • 1 cara cara orange peeled and thinly sliced
  • 1 blood orange peeled and thinly sliced
  • 1 navel orange peeled and thinly sliced
  • 1 cup mixed greens packed
  • 3 tablespoons crushed pistachio 

Instructions
 

  • To make the dressing, combine lemon juice, olive oil, honey, salt and pepper together in a small bowl. Set aside.
  • Arrange the sliced oranges and mixed greens on a plate.
  • Drizzle the dressing. Top with crushed pistachios.
