This fresh, eye-catching salad is made with three types of oranges - navel, cara cara and blood orange. It is drizzled with simple citrus dressing, and topped with crushed pistachio.
It is perfect for easy lunches or dinners, and it pairs well with any kind of dish. Needless to say, it is fancy enough for parties and holidays as well!

Easy citrus honey dressing
This salad is drizzled with simple citrus honey dressing. There is the perfect balance of sweetness and the tanginess, yet it is not overpowering so the flavor of the oranges still shines at its best.
All it takes is mixing 5 dressing ingredients in a bowl, and it'll be ready to go!
Ingredients for this recipe
For dressing
- Lemon juice - Fresh (recommended) or bottled.
- Olive oil
- Honey - Switch to maple syrup for vegan option.
- Salt & pepper
For salad
- Cara cara orange
- Blood orange
- Navel orange
- Mixed greens
- Crushed pistachio - I use lightly salted type.
How to make tricolor orange salad
1. Make the dressing - Combine the dressing ingredients together and set aside.
2. Arrange - Lay out the mixed salad leaves, and the orange slices on a plate.
3. Drizzle & finish! - Drizzle dressing and top with crushed pistachios.

How to slice oranges
First, slice off the top and bottom of the oranges. Then let them stand upright, and carefully slice off the skin on the sides with a sharp knife, following the curves of the fruits. Lastly, slice them thin, crosswise.
One tip here is to leave the oranges in the fridge until you are ready to cut into them. Colder, firmer oranges are definitely easier to cut than room temperature fruits.
Make ahead option
You can make the citrus dressing up to 2 days in advance. Cover and keep refrigerated until ready to use.
The oranges, salad leaves can be prepared ahead of time and stored separately in the fridge. Since salad leaves wilt, wait to assemble and dress the salad until you are ready to serve.

Ingredients
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 2 teaspoons honey or maple syrup for a vegan option
- Salt and pepper to taste
- 1 cara cara orange peeled and thinly sliced
- 1 blood orange peeled and thinly sliced
- 1 navel orange peeled and thinly sliced
- 1 cup mixed greens packed
- 3 tablespoons crushed pistachio
Instructions
- To make the dressing, combine lemon juice, olive oil, honey, salt and pepper together in a small bowl. Set aside.
- Arrange the sliced oranges and mixed greens on a plate.
- Drizzle the dressing. Top with crushed pistachios.
