2 large eggs ⅔ cup organic cane sugar ½ cup unsweetened dairy-free yoghurt I use cashew milk yoghurt ½ cup unsweetened almond milk ½ cup avocado oil or any neutral tasting oil 1 teaspoon ube extract 1¼ cup gluten-free all purpose flour 1½ teaspoon baking powder ½ teaspoon salt

Preheat the oven to 350°F/ 177°C. Line a loaf pan.
In a large bowl, whisk the eggs and sugar together.
Mix in the yogurt, almond milk, and avocado oil.
Add in the ube extract. Mix well.
Add in the all purpose flour, baking powder, and salt. Mix until well combined.
Pour the batter into the pan. Bake for 45-55 minutes, or until an inserted toothpick comes out with a few moist crumbs but with no wet batter.
Once cooled completely, dust with powdered sugar.
