Ingredients
 
 

  • 2 large eggs
  • cup organic cane sugar
  • ½ cup unsweetened dairy-free yoghurt I use cashew milk yoghurt
  • ½ cup unsweetened almond milk
  • ½ cup avocado oil or any neutral tasting oil
  • 1 teaspoon ube extract
  • cup gluten-free all purpose flour
  • teaspoon baking powder
  • ½ teaspoon salt

Topping (optional)

  • Powdered sugar

Instructions
 

  • Preheat the oven to 350°F/ 177°C. Line a loaf pan.
  • In a large bowl, whisk the eggs and sugar together.
  • Mix in the yogurt, almond milk, and avocado oil.
  • Add in the ube extract. Mix well.
  • Add in the all purpose flour, baking powder, and salt. Mix until well combined.
  • Pour the batter into the pan. Bake for 45-55 minutes, or until an inserted toothpick comes out with a few moist crumbs but with no wet batter.
  • Once cooled completely, dust with powdered sugar.
