    Satay beef noodles is a flavorful dish with tender sliced beef, vegetables, rice vermicelli tossed in homemade nutty satay sauce. It can be made in just around 20 minutes, making a great option for weekday lunch/ dinner.

    This noodle dish is absolutely comforting, easy to make, and satisfying! There’s the aromatic combo of garlic and onion, crunchy red bell peppers, and umami rich beef. 

    The star of the dish is the satay sauce, which combines peanut butter, tamari soy sauce, honey and rice vinegar for a perfect balance of sweet and savory. 

    The vegetables are simply stir-fried in a pan, then tossed in the sauce with rice noodles. It is finished off with sliced scallions and crushed peanuts for a fresh, contrasting texture.

    Ingredients for this recipe

    • Dry rice vermicelli - I use Vietnamese style
    • Olive oil
    • Garlic - Minced
    • Onion - Sliced
    • Thinly sliced beef
    • Salt
    • Sake - Or dry white wine
    • Red bell pepper - Thinly sliced

    For satay sauce:

    • Peanut butter - Unsweetened natural type
    • Tamari soy sauce
    • Honey
    • Rice vinegar

    Toppings:

    • Thinly sliced scallions
    • Crushed peanuts

    How to make satay beef noodles

    Step 1. Make satay sauce. Combine the peanut butter, tamari soy sauce, honey and vinegar together in a bowl. Set aside.

    Step 2. Cook the rice noodles according to the package. Rinse under cold water to avoid sticking and cooking further. Drain well using a strainer. 

    Step 3. Heat up the olive oil. Cook the garlic and onion until the onion is slightly tender.

    Step 4. Add the beef, salt, and sake. Cook 80% of the way. 

    Step 5. Add the red bell pepper. Cook for a minute.

    Step 6. Add the cooked noodles and satay sauce. Toss gently.

    FAQ

    What other noodles can I use?

    You can use any other gluten-free noodles of your choice such as rice sticks (thicker rice noodles often used for Pad Thai), 100% buckwheat soba noodles, or mung bean vermicelli (glass noodles). 

    How should I store stay beef noodles?

    Satay beef noodles can be kept refrigerated for up to 3 days, covered tightly. To reheat, cook in a skillet with a bit of oil, or microwave for a few minutes.

    • 9 ounces rice vermicelli noodles (dry) I use Vietnamese style

    • 1 medium onion thinly sliced
    • 1 pound thinly sliced beef
    • ¼ teaspoon salt
    • 1 tablespoon sake or dry white wine
    • 1 red bell pepper thinly sliced

    For satay sauce

    • ¼ cup tamari soy sauce
    • 3 tablespoons honey
    • 2 tablespoons rice vinegar

    For toppings

    • Crushed peanuts
