    Jasmine rice is extremely easy to cook in one pot, without any soaking in advance. Once the rice is cooked, it is gently stirred with fresh lime juice, chopped cilantro, and finely chopped scallions. The combo of fresh herbs and citrus transforms simple rice into a vibrant and flavorful accompaniment.

    Ingredients for this recipe

    • Jasmine rice
    • Water
    • Salt
    • Garlic - minced
    • Olive oil
    • Chopped cilantro
    • Scallion - finely chopped
    • Lime juice - fresh or bottled

    Optional toppings:

    • Cilantro leaves
    • Red pepper flakes

    How to make cilantro lime rice

    Step 1. Rinse the jasmine rice and drain well using a strainer.

    Step 2. Place the rice, water, minced garlic, 1 teaspoon olive oil and salt in a small saucepan. 

    Step 3. Bring to a boil, then cover with a lid. Lower the heat and simmer for 15 minutes, or until the water is completely absorbed. Turn the heat off and let it stand for 5 minutes.

    Step 4. Add the cilantro, scallion, remaining olive oil, and lime juice. Stir gently. Season with more salt if desired.

    Step 5. Serve with cilantro leaves and red pepper flakes.

    FAQ

    Should I remove the stems of cilantro?

    I like to chop up stems and leaves together. If preferred, you can remove thick stems.

    How should I store cilantro lime rice?

    Cilantro lime rice can be refrigerated for up to 4 days, or kept frozen for up to 2 months. Microwave or cook over the stovetop for a few minutes to reheat.
