How to make cilantro lime rice
Step 1. Rinse the jasmine rice and drain well using a strainer.
Step 2. Place the rice, water, minced garlic, 1 teaspoon olive oil and salt in a small saucepan.
Step 3. Bring to a boil, then cover with a lid. Lower the heat and simmer for 15 minutes, or until the water is completely absorbed. Turn the heat off and let it stand for 5 minutes.


Step 4. Add the cilantro, scallion, remaining olive oil, and lime juice. Stir gently. Season with more salt if desired.
Step 5. Serve with cilantro leaves and red pepper flakes.


FAQ
I like to chop up stems and leaves together. If preferred, you can remove thick stems.
