    Bacon wrapped enoki mushrooms is an easy, delicious dish, finished with a drizzle of tangy ponzu-like sauce. This perfect combo of crispy bacon and juicy mushrooms makes you want to go for one after another!

    Bacon wrapped enoki is one popular dish in Japan. You will see them at the bars and restaurants so often but they are also super easy to make at home.

    What is Enoki?

    Enoki is a type of mushroom used often in Asia, especially in Japanese cuisine. The long, thin strands are reminiscent of noodles.

    They have a mild, sweet, yet slightly earthy flavor with a chewy texture. These versatile mushrooms are perfect for stir frying, simmering (hot pot), frying or even a healthy replacement for noodles.

    How to Prepare Enoki?

    You will notice the enoki mushrooms are connected into a bunch with a bottom root. The root needs to be cut off before you eat them as it has small pebbles and dirt. Then you can rinse them gently with water and they are ready to go!

    Ingredients for Bacon Wrapped Enoki

    • Enoki mushrooms - They can be found in any Asian grocery stores. I have seen at Wholefoods as well
    • Bacon
    • Lemon juice
    • Tamari soy sauce

    How to Make Bacon Wrapped Enoki

    1. Prepare the mushroom. Cut off the roots of the enoki. 

    2. Cut the bacon strips in half lengthwise.

    3. Wrap the enoki with bacon pieces.

    4. Cook. Cook with the bacon end side down. Roll over to cook other sides.

    5. Season. Combine lemon juice and tamari together and drizzle over the wraps.

    6. Steam. Cover with a lid, cook for 1 minute over medium heat.

    Tips

    1. When preparing the enoki, try not to cut too far up so the mushrooms can stay intact. (But make sure the part with little pebbles and dirt is completely cut off). This makes it easier to do the wrapping as the mushrooms won’t spread everywhere.

    2. Wrap the mushrooms as tight as possible. Since the enoki shrinks when cooked, this prevents the wraps from loosening which could result in the mushrooms slipping out!

    3. Make sure to cook the wraps with the bacon end side down first. That way you can seal the wraps better, helping the mushrooms to stay in place.

    Ingredients
     
     

    • 1 bunch enoki mushrooms
    • 3 strips bacon
    • 1 tablespoon lemon juice fresh or bottled
    • 1 tablespoon tamari soy sauce

    Optional toppings:

    • toasted white sesame
    • chopped cilantro

    Instructions
     

    • Cut off the roots of the enoki. Do not cut too far up so the mushrooms stay intact.
    • Cult the bacon strips in half lengthwise so you will have 6 pieces of bacon.
    • Place a bacon piece vertically on the cutting board. Take ⅙ of the enoki and place horizontally on the edge. Roll up tightly.
    • Heat up some cooking oil in a large pan. Cook the wraps with the end side down. Once the end side is completely cooked, gently roll over to cook other sides.
    • Combine lemon juice and tamari together and drizzle over the wraps.
    • Cover with a lid, cook for 1 minute over medium heat.

    Notes

    For the searing in step 4, work in batches if there is not enough space to roll around the wraps. After the searing is done, put them all back in the pan (they can be crowded) so you can season and finish them all together.
    Double the recipe to make this into a main dish for three.
