    These peanut butter blondies are super chewy and tender, made free of gluten, dairy, and refined sugar. Enjoy this quick healthy treat with your cup of coffee (or tea!).

    Being a peanut butter maniac, I had to share this recipe with you all. These blondies are full of peanut buttery flavor, sweetened mildly with coconut sugar and honey. They are 100% made with fiber-packed almond flour, making this recipe perfectly gluten free. 

    With everything mixed in one bowl, this recipe is extremely easy to make. The ingredients are fairly simple with just kitchen staples, saving you a trip to the grocery store!

    Secret to the chewiness...

    Its chewy moist texture is beyond imagination! The honey acts somewhat similar to molasses creating that dense, chewy feel. There is also a perfect amount of coconut oil that keep the blondies nice and moist even on the next day (if there’s ever any leftovers).

    Ingredients for this recipe

    • Eggs
    • Refined coconut oil - 'Refined' type has no flavor whereas 'virgin' type has a bit of coconut scent.
    • Coconut sugar 
    • Honey
    • Vanilla extract
    • Unsweetened natural peanut butter - Use the one where the ingredients are just peanuts and salt (or just peanuts), with a runny texture.
    • Almond flour - Blanched fine flour. Do not use almond meal.
    • Baking soda
    • Cinnamon

    For topping: 

    • Nuts of your choice - I like to use a mix of crushed pecans and cashews.

    How to make gluten free peanut butter blondies

    1. Preheat the oven to 350°F/ 177°C. Line or lightly grease a 9 x 9 (or 8 x 8) inch square pan.

    2. Whisk the eggs in a bowl, then mix in melted coconut oil, sugar, honey, vanilla extract and peanut butter. 

    3. Add in the dry ingredients - almond flour, baking soda, and cinnamon. Stir well.

    4. Pour the batter into the prepared pan and spread evenly. Sprinkle nuts of your choice on top.

    5. Bake for 18-20 minutes, or until the surface is just set but soft and jiggly in the middle. Cool for at least 15 minutes before cutting in.

    Tip for making this recipe

    1. Make sure to use natural peanut butter that has a runny texture. If you use a solid type (i.e Skippies kind), the batter will be too thick to be spread in the pan.

    2. Mix the batter well. Give a good whisk especially when adding the peanut butter. Make sure everything is fully blended before adding the almond flour. 

    3. Do not over bake. They continue to cook while cooling down. For a chewy tender texture, underbake slightly or until just set and still soft in the middle.

    How should I store gluten free peanut butter blondies?

    These blondies can be stored at room temperature for up to two days. After that, make sure to refrigerate, covered tightly.

    8 x 8 vs 9 x 9 pan?

    I normally use a 9 x 9 inch pan with the baking time at around 18 minutes (baking time depends on your oven strength). If you are using an 8 x 8 pan, the blondies will come out slightly taller. Ensure to adjust the baking time accordingly.

    Ingredients
     
     

    • 2 large eggs
    • ¼ cup refined coconut oil melted
    • ⅓ cup coconut sugar
    • ⅓ cup honey
    • 1 teaspoon vanilla extract
    • ½ cup unsweetened natural peanut butter use a runny type
    • 1¼ cup almond flour
    • 1 teaspoon baking soda
    • 2 teaspoons ground cinnamon

    Topping:

    • 1 cup nuts of your choice I use a mix of crushed pecans and cashews

    Instructions
     

    • Preheat the oven to 350°F/ 177°C. Line a 9 x 9 (or 8 x 8) inch square pan.
    • In a large bowl, whisk the eggs. Then mix in melted coconut oil, sugar, honey, vanilla extract and peanut butter. Mix well.
    • Add in the almond flour, baking soda, and cinnamon. Stir well.
    • Pour the batter into the prepared pan and spread evenly. Sprinkle nuts of your choice on top.
    • Bake for 18-20 minutes, or until the surface is just set but still soft and jiggly in the middle. It rises in the oven and deflates a little once taken out of the oven. Do not over bake as it continues to cook while cooling.
    • Cool for at least 15 minutes before cutting in.

    Notes

    If your peanut butter does not contain salt, add ¼ teaspoon fine salt to the batter.
