    Mango pudding is such a perfect dessert that is packed full of tropical flavor. It is a great no-bake treat that works for the warmer season, and is extremely easy to make. 

    Frozen, or fresh, any type of mango can be used for this recipe, and the rest of the ingredients are fairly simple such as sugar, milk, and gelatin powder. 

    The mix of mango pudding base is gently warmed to dissolve the gelatin before being poured into cups. It then requires refrigeration for four hours or more to achieve its characteristic smooth and set texture.

    Once chilled, this delicious dessert can be enjoyed plain, or topped with whipped cream or ice cream of your choice!

    Ingredients for this recipe

    • Unflavored gelatin powder
    • Water
    • Pureed mango
    • Unsweetened almond milk
    • Sugar

    Optional toppings:

    • Non-dairy whipped cream or ice cream
    • Mint leaves

    How to make mango pudding

    Step 1. Prepare gelatin. In a microwavable cup, combine the gelatin powder and water together. Whisk well immediately with a fork, then let sit for 5 minutes. It'll start to look spongy, absorbing the liquid.

    Step 2. Make pudding base. While letting the gelatin sit, combine the pureed mango, almond milk, and sugar together in a saucepan. Stir well until the sugar has completely dissolved. Do not let it boil.

    Step 3. Melt gelatin. Microwave the gelatin + water mix (from step 1) at 20 seconds increments until the gelatin has completely dissolved. Alternatively, melt in a double boiler, stirring constantly. Do not let the mix boil as it weakens gelatin's setting power.

    Step 4. Add gelatin. Pour the dissolved gelatin mix into the pudding base, stir well.

    Step 5. Chill. Pour the mix into cups and refrigerate for 4 hours or more.

    Tips

    If your mango seems fibrous, strain after pureeing in the blender/ food processor.

    Can I use frozen mango?

    Yes! Make sure to thaw completely before making it into a puree. 

    Can I adjust the sweetness?

    Depending on the sweetness of your mango, you can decrease or increase the amount of sugar.

    How long does it keep?

    Although fresher the better, this mango pudding can be kept refrigerated for up to 5 days.
