I love this beef chili so much that I make this on weekly basis, especially during the cold season. It is packed full of vegetables but since they are simmered down, it is so easy to eat. The mix of spices add a wonderful aroma, making this chili irresistible.
Instant Pot makes the entire process a breeze - all you need to do is to cook the ground beef on sauté mode, add the rest of the ingredients and let it do the rest of the cooking! It is super hands-off, and works perfect for busy weeknights as well.

Is this chili spicy?
Whether you like it spicy or not, it is easily adjustable.
To keep it non-spicy (or family friendly), use 2 tablespoons of smoked paprika as shown in the recipe below. If you would like to add some heat, try using 1 tablespoon smoked paprika + 1 tablespoon ancho chili powder. Ancho chili adds mild to medium heat with a nice smoky, fruity flavor.
Topping ideas
Be creative with the toppings! It’s a lot of fun to spread out different toppings on the table and make it into a ‘create-your-own’ beef chili station.
My favorites are:
- Corn - canned corn. Make sure to drain before using.
- Cilantro
- Scallions
- Chopped red onion
- Bacon bits
- Avocado cubes
- Dairy-free cheese
- Dairy-free sour cream
- Jalapeno slices
Ingredients for Instant Pot beef chili
- Olive oil - or avocado oil
- Garlic
- Onion
- Ground beef
- Bell pepper
- Canned diced tomato
- Canned black beans
- Celery
- Smoked paprika powder (switch to ancho chile pepper for a bit of heat)
- Ground cumin
- Salt
- Dried basil, or oregano
- Vegetable broth - can be substituted with water but highly recommend to use some kind of broth to add depth to the flavor.
How to make this recipe
1. Using sauté mode on the instant pot, heat up the olive oil. Cook the garlic and onion until fragrant.
2. Add in the ground beef and cook fully. Turn off the sauté mode.
3. Add the rest of the ingredients into the pot. Close the lid and make sure the valve is at sealed position.
4. Pressure cook on high for 20 minutes. Once the cooking time is over, let the pressure come down naturally, or quick release the pressure after waiting for at least 10 minutes.
5. Garnish with your favorite toppings such as corn, dairy free sour cream, cilantro and avocado cubes.

Tips
Make sure to drain the diced tomatoes and beans well. This prevents the chili from becoming too watery.
If the chili comes out too watery, simmer for a few minutes using sauté mode until it reaches your desired consistency.
Can I double this recipe?
Yes! This recipe works perfectly even when doubled. Simply double all ingredients and cook for the same amount of time. The chili tastes even better on the next day so why not make a bigger batch?

Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 large onion chopped
- 1 pound ground beef I use 80% lean
- 1 red bell pepper or any color
- 1 can diced tomato 14-ounce size can, drained
- 1 can black beans 15.5-ounce size can, drained
