Pepper steak has been our family favorite for the longest time and I appreciate how easy it is to put this together even in a pinch. It is a simple stir fry with very tender beef slices, thanks to the cornstarch and sake in the marinade.
The scrumptious sauce is made with simple ingredients such as garlic, tamari soy sauce, sake and oyster sauce which adds a perfect amount of umami. It thickens nicely as it gets cooked, making it pair perfectly with rice.

While any type of beef cut will work for this recipe, you can choose depending on your preference and budget. For example, if you would like to treat yourself, go for ribeye which is full of flavor and slice thin. For a budget friendly and leaner option, top sirloin or sirloin tip would be a god fit.

- Thinly sliced beef
- Cornstarch
- Tamari
- Sake - or dry white wine
- Salt
- Gluten free oyster sauce
- Water
- Sesame oil
- Garlic
- Yellow bell pepper
- Red bell pepper
How to make pepper steak stir fry
1. In a bowl, combine the beef, cornstarch, tamari, sake, salt together and mix well. Let sit for about 20 minutes.
2. In a small cup, mix the oyster sauce and water together and set aside.
3. Heat up the sesame oil in a pan. Cook the garlic until fragrant, then cook the marinated beef.
4. Add in the bell peppers, oyster sauce/ water mix. Cook until the sauce thickens for about 2 minutes. Serve with rice!
Should I always marinate for 20 minutes?
20 minutes is just the right amount for the meat to absorb the flavor from the marinade. Also it gives enough time for the cornstarch to stick to the surface. This helps to lock in the moisture while cooking, keeping the meat tender and juicy. However, you can cut down the marinating time to 10 minutes if in a pinch!
How to store pepper steak
Cooked stir fry can be refrigerated in an airtight container for up to 3 days. TO heat up, microwave or cook over the stovetop with a little bit of oil.
