    This better-than-take-away shrimp pad thai is packed full of vegetables and protein, making it a satisfying meal. The flavor is so complex yet comforting with the combination of nuttiness, tanginess, savory umami, and sweetness. Feel free to throw in any vegetables you have on your hand as well!

    This shrimp pad thai is amazingly delicious that you will want the entire pan to yourself!

    This dish is ready in just around 20 minutes. All it takes for the sauce making is combining five ingredients in a bowl. Once the shrimp and vegetables are stir fried, all you need to do is to add in the cooked noodles with the sauce, and toss. Last but not least, fancy up the dish as you like with toppings such as crushed nuts, cilantro leaves and/ or lime wedges.

    Which noodle works for this recipe?

    Flat rice noodles are used in this recipe. The ones I use are flat and wide, usually about 5mm. You can either look for Thai-style dry noodles, or Vietnamese rice noodles used for making pho. They can be found in the international section, or at Asian grocery stores.

    Ingredients for this recipe

    For sauce:

    • Unsweetened peanut butter
    • Coconut sugar
    • Rice vinegar
    • Fish sauce
    • Lemon juice - Fresh (recommended) or bottled

    For noodles:

    • Dry flat rice noodles
    • Olive oil
    • Garlic
    • Large shrimp
    • Salt
    • Red bell pepper
    • Scallions
    • Bean sprouts

    Toppings (optional):

    • Cilantro leaves
    • Crushed cashews or peanuts
    • Lime slices

    How to make shrimp pad thai

    1. Combine all ingredients for the sauce together and mix well. Set aside.

    2. Boil the rice noodles 1 minute less than as directed on the package. Rinse under running water and drain completely. Drizzle olive oil over the noodles and toss.

    3. Heat up some oil in a large pan, cook the garlic until fragrant.

    4. Cook the shrimp with salt, then add in the bell pepper, scallions, and bean sprouts. Cook for 1 minute over high heat.

    5. Add in the cooked noodles and the sauce mix. Toss well.

    Optional: serve with cilantro, crushed cashews, and lime slices.

    Ingredients
     
     

    For the sauce:

    • 4 tablespoons natural unsweetened peanut butter
    • 4 tablespoons coconut sugar
    • 4 tablespoons rice vinegar
    • 4 tablespoons fish sauce
    • 2 tablespoons lemon juice

    For the noodles:

    • 7 ounces dry flat rice noodles
    • 1 tablespoons olive oil
    • 4 cloves garlic minced
    • 10 ounces large shrimp peeled and deveined 
    • ¼ teaspoon salt
    • 1 red bell pepper thinly sliced
    • 4 stalks scallions chopped
    • 3 cups bean sprouts rinsed and drained

    Toppings (optional):

    • Crushed cashews or peanuts
    • Cilantro leaves
    • Lime slices
