It is a simple yet incredibly delicious dish that I have been making over and over especially on a busy day. Ginger does a lot of work to enhance the flavor, yet without overpowering. The shiitake, oyster sauce and tamari are the key ingredients to boost the umami flavor as well.

Delicious Brown Sauce
There is a combination of tamari soy sauce and oyster for a deep umami rich flavor. On top of that, there’s honey to balance out the savory, and sesame oil for an aromatic touch. All you need to do is to mix the sauce ingredients together and it's ready to go.
Best Beef for Stir Fry
If you can find sliced beef for stir fry, that’s great, you will have the cutting job covered. Bigger cuts such as boneless sirloin steak or skirt steak can be used as well. When slicing, make sure to cut the meat against the grain for a better mouthfeel.
How To Prepare Rice Noodles
Rice noodle is a perfect option when it comes to gluten-free cooking. They are made from rice and have a chewier bouncier texture than wheat based noodles.
You can cook them in boiling water just like regular pasta. Then drain the water well using a strainer.
If you are able to time everything right, you may transfer the noodles right into the sauce and toss. If you need a little more time (even a few minutes), make sure to rinse the noodles under running water to prevent them from cooking further.
Ingredients and Substitutions
- Rice noodles - (M size flat rice noodle sticks)
- Avocado oil - or any neutral tasting oil such as olive or refined coconut oil
- Freshly grated ginger
- Garlic
- Thinly sliced beef - see the section 'Best Beef for Stir Fry' above for details
- Sugar snap peas - snow peas, or green beans would be good subs
- Shiitake mushrooms - baby portobello or shimeji mushrooms work
Sauce mix
- Tamari soy sauce
- Gluten-free Oyster sauce - Although it will taste a little different, hoisin sauce works as well. Make sure to use a gluten-free brand.
- Honey
- Sesame oil
- Water
Optional toppings
- Cilantro
- Toasted white sesame
Step by Step
1. Cook the rice noodles. Once cooked, rinse under cold water to avoid sticking and cooking further.
2. Make the sauce mix. Combine the sauce ingredients together. Set aside.
3. Cook the garlic and ginger in a pan until fragrant.
4. Add in the beef. Season with 4 tablespoons of the sauce mix.
5. Add in the mushroom. Stir fry for 1 minute.
6. Add in the sugar snap peas. Stir fry for 1 minute.
7. Add the noodles. Pour in the rest of the sauce mix. Toss gently with chopsticks.

How Long Does It Last For?
Ginger beef noodles can be refrigerated in an airtight container for up to 3 days. Microwave cling wrapped loosely, or heat up in a large pan over the stove top.
The noodles can also be frozen for up to 2 months. Beyond this, the rice noodles may develop a mushy texture which makes it unenjoyable.

Ginger Beef Pan Fried Noodles
Ingredients
- 10 ounces dry rice noodles I use M size rice sticks
- 2 tablespoons avocado oil or any neutral tasting oil i.e. olive oil
- 3 tablespoons freshly grated ginger
- 2 cloves garlic minced
- 1 pound thinly sliced beef any beef cut for stir frying
- 2 cups sugar snap peas stem ends and strings removed
- 10 shiitake mushrooms stems removed and sliced thinly
Sauce ingredients
- ⅓ cup tamari soy sauce
- 4 tablespoons gluten-free oyster sauce
- 3 tablespoons honey
- 2 tablespoons sesame oil
- ⅓ cup water
Optional toppings
- toasted white sesame
- cilantro leaves
Instructions
- Cook the rice noodles according to the package. Rinse under cold water to avoid sticking and cooking further.
- Combine the sauce ingredients together in a cup. Set aside.
- In a large pan, heat up the avocado oil (or any cooking oil) and cook the garlic and ginger together until fragrant.
- Add in the beef. Once it starts to brown, add in 4 tablespoons of sauce mix to the beef. Toss gently for 1 minute.
- Add in the mushroom. Stir fry for 1 minute.
- Add in the sugar snap peas. Stir fry for 1 minute.
- Add in the cooked rice noodles and pour in the rest of the sauce mix. Toss gently with chopsticks or tongs.
