    These Japanese sweet potato fries are crispy on the outside and fluffy soft on the inside. They are oven roasted to perfection, with just 4 simple ingredients. Enjoy this naturally sweet, delicious and healthier fries as a side or snack!

    Their natural sweetness is what makes these fries irresistible. The oven roasting process intensifies the sweetness even more, making them enjoyable without much seasoning.

    They are extremely easy to make without frying (meaning no hot oil mess!), lighter but still have that crispiness that you would always want in fries.

    What are Japanese sweet potatoes?

    Japanese sweet potatoes have a deep purple skin with white yellow-ish flesh. They are starchier, and much sweeter than American sweet potatoes. They can be used both for savory dishes, or sweets such as this Japanese sweet potato tart.

    Where to buy Japanese sweet potatoes

    Whole Foods carries them most of the time, and you can also find them at Asian grocery stores. Make sure to check the label before you purchase as they could get mixed up with other kinds of potatoes with similar colored skin.

    Should I peel the potatoes?

    I like to leave some skin on as it gives a nice color contrast and a rustic flavor. Try to peel off any rough patches on the surface to prevent undesirable texture.

    Ingredients and substitutions

    • Japanese sweet potatoes - try to pick a potato that is perfectly oblong or straight shape. It allows you to cut in even shapes easily.
    • cornstarch - potato starch works as well.
    • avocado oil - or olive oil
    • salt

    How to make this recipe

    1. Preheat the oven to 425°F/ 218°C

    2. Wash and peel them partially or entirely, depending on your preference.

    3. Cut the potatoes into sticks.

    4. Place the potatoes in a large bowl and sprinkle cornstarch. Toss to coat.

    5. Pour the oil over the potatoes and toss to coat.

    6. Place the potatoes on a baking sheet in one layer.

    7. Roast for about 25 minutes or until golden brown and crispy. Flip the potatoes once while cooking.

    8. Sprinkle salt and serve.

    Dips & toppings

    While these fries are so delicious on their own, here are some ideas for you.

    • Ketchup
    • Sriracha mayo - Mix them 1:1 together and enjoy the nice kick!
    • Black sesame sprinkle
    • Honey - Drizzle a good amount and make it into a dessert.
    • Dip in your favorite ice cream. - Just like McFlurry. Yes it totally works.

    Can I use an air fryer?

    Yes definitely! Preheat the air fryer to 390°F and air fry for 10 minutes. Flip or shake the basket, then cook for another 10 minutes or until golden crispy. Adjust the frying time depending on the thickness of the fries.

    Ingredients
     
     

    • 2 medium Japanese sweet potatoes weight: 1¼lb
    • 2 teaspoons cornstarch
    • 2 tablespoons avocado oil or olive oil
    • salt to taste

    Instructions
     

    • Preheat the oven to 425°F/ 218°C.
    • Wash and scrub the potatoes well. Peel them partially or entirely, depending on your preference.
    • Cut the potatoes into sticks. Thinner the quicker they will cook. Make sure they are evenly cut for even cooking.
    • Place the potatoes in a large bowl and sprinkle cornstarch. Toss well to coat.
    • Pour the oil over the potatoes and toss to coat.
    • Place the potatoes on a baking sheet in one layer. You may need 2 sheets depending on the volume you have.
    • Roast for about 25 minutes or until golden brown and crispy. Flip the fries once around 15 minutes into baking.
    • Sprinkle salt and serve.

    Notes

    If you would like them to be on the crispier side, cut in ¼ inch thickness. For a softer interior, cut in ½ inch thickness. 
    Do not over crowd the potatoes as that can end up steaming and prevent them from getting crispy.
